Sweet Hawaiin Chicken (crockpot cooking)


This is a ridiculously easy dish to prepare in your crockpot.  I set mine up this morning and while I am at work it’s slowly creating a wonderully, tender, sweet chicken thigh with a rich sauce to serve with rice.  This was a recipe I found on facebook last year and have tweeked it a little to our liking and you can too!!  The chicken just pulls apart and is loaded with flavor.

2lb. Chicken chunks (I use boneless, skinless chicken thighs as the darker meat adds great flavor)
1 cup pineapple juice (I use 2 small cans)
1/2 cup brown sugar
1/3 cup soy sauce

3 Tablespoons Cornstarch

Scallion greens chopped to serve on top 

Combine all in the crockpot and set it on low for 6-8 hours.  Make some rice before serving and you have a great meal.  EASY!!!

Some optional ingredients we have used at different times are:  1 can chopped water chestnuts, 1 can drained bamboo shoots, frozen carrots & peas, snow peas (as many as you like), chopped clove of garlic, peanuts on top, dried sweetened Kiwi on the side, red pepper flakes

So you see you can add anything you like!!  My crockpot is old old old and is used a few times every week.  I have 2 newer ones but I really like this one so excuse it’s look!!!
