We call this dish pepper pot. Super easy and a nice meal for when you have no time to cook at night.
You can serve it over rice or add a little more broth and some barley and make a soup which is great in the winter (if making soup omit the cornstarch).
Here is how I made it yesterday before I left for work:
1 1/2 lb sirloin steak cut into 1″ cubes
2 cups beef broth
3 cloves garlic minced
1 cup julienne styled peppers (any color or variety or multiple colors to make it pretty!!)
1 cup thin sliced onion
3 Tablespoons cornstarch
salt/pepper to taste
Pasta or rice to serve over
Put all in crockpot and set it on low for 6-8 hours. (I have also thrown in peas or beans to add another vegetable to it)
That’s it! Easy!
Looks like a good one to try. We love peppers and always have beef on hand. Will have to try it this week.
