Avocado Chia Seed Chocolate Pudding

This is a delicious healthy way to indulge a little!  The benefits from the avocado and chia seed are plentiful and good for your body!  So go ahead and enjoy!

2 ripe avocados peeled and chopped
1/3 cup cocoa powder
3 TBSP Chia Seeds
1/4 cup honey or agave (I use our homemade maple syrup too)
2/3 cup almond milk, coconut milk, or regular milk
1 1/2 tsp. vanilla

Place all in a blender and blend until somewhat smooth. (you may have to scrape the sides of the blender here and there).

**this will not be as smooth as a regular pudding with the Chia Seeds. If you want a smooth pudding omit the seeds and reduce the milk to 1/2 cup

Homemade Chocolate Pudding

A fellow blogger posted this on her blog this morning and being a pudding lover, I mean someone who REALLY loves pudding, I had to try this.  Below are the pictures making it and the link to her blog and recipe.  YOU MUST TRY THIS!!  This was so simple and delicious.  I am already envisioning my next chocolate cream pie with it and making it in snack size bowls for the kids lunches.  I love that I know exactly what’s in it.  I followed her directions and doubled it like she does.  It came out perfect!!  Can’t wait to try the vanilla next!!

Simple ingredients

Avocado Chocolate Pudding

I admit it, I am not an avocado fan.  Sorry, I don’t like the texture of them and I have tried them every way you can try them.  I know they have many health benefits so a few years ago I saw a recipe for Avocado Chocolate Pudding.  Any type of pudding is my downfall.  I LOVE  the stuff!!!  So I decided I would give this a try.  YUM is all I can say.  I make this every other week it seems if not more.  The kids love it with a little whipped cream.  I put it in their lunches for a great dessert at lunch time.

Keep blending if using a hand mixer for smooth pudding.  The blender or food processor is much better if you want it as smooth as regular pudding.

Avocado Chocolate Pudding

2 ripe medium avocados, peeled and chopped

1/3 cup cocoa powder (I use Hershey’s)

1/4 cup honey (I cut it back a bit as it’s sweet)

1/2 cup milk (regular, almond, or coconut)

1 1/2 teaspoons vanilla extract

Blend all ingredients using a blender or food processor.  You can use a hand held mixer but it won’t be as creamy as the blender.  Chill for an hour and serve

I used the hand mixer and then transferred to the blender.  Also my kids will eat it right after I make it without waiting for it to chill!!

This is delicious, filling and creamy!!  Don’t be afraid of the avocado, you can’t even taste it!!! Give it a try
