Ok….it was 4 ingredients for half the batch as I added chocolate chips to some.
1 cup of peanut butter
1 cup of sugar
1 egg
mix all until smooth, add chocolate or butterscotch chips if desired, form teaspoon size balls and press with a fork. Bake at 350 for exactly 12 minutes and you have a delicious cookie. These are also gluten free!

Texturally how are these? Soft? Crisp? Could they stand to be bigger to make them more chewy? I really want to try these in my kitchen!
They are soft and not grainy or gritty. I store them in an air tight container with a half of slice of bread to keep them soft for a week (they don’t last long in my house)

I used to make these regularly when my kids were little–always using crunchy peanut butter though, which added that extra bit of texture you’ve got with the choc chips. Great memories. 🙂
